Read the spec sheet, and the machine tells on itself.
One that lists a microbial process and an NPK figure, as the Hass Electric Food Waste Composter does, is answering the composting question. One that only quotes a volume-reduction percentage is quietly answering the dehydration one.
And check the running costs before the sticker. A unit $200 cheaper up front that needs $300 of filters a year is the more expensive machine by month eighteen.
What survives a real kitchen
Specs are theory. A hot commercial kitchen is the test.
A heat-and-dry unit venting warm, moist food air into a small, hot space fights a losing battle with odour. Where there's odour, pests follow. In a home, you tolerate a faint smell. Near a pass, it's a health-inspection conversation, and the machine gets switched off.
A stranded appliance saves you nothing. That's exactly how the café owner's thousand dollars ended up beside the mop.
A sealed unit with genuine odour control behaves very differently from a grinder drying food with heat. If it can't survive a summer service, its compost credentials are irrelevant.
Close the loop, because customers are checking
Say reduction is working, and the machine handles the rest. The output still has to go somewhere.

But there's a trap in that number. Consumers reward real action and punish greenwashing hard.
Put a "we compost our waste" sign in the window while a bin of dried scraps goes to the same landfill, and that's a claim you can't defend when someone asks. Match your public story to what your operation actually does.
Cutting food waste was never about the machine in the corner. It's about ordering closer to what you sell, prepping closer to what you serve, and processing only what's genuinely left.
The operators who win the next few years won't be the ones who bought the shiniest appliance first. They'll be the ones who weighed the bin before they signed anything and knew exactly what they were paying for twice.
